Pasta Prep Cook – Fine Dining Italian Restaurant

 

We are seeking a skilled and motivated Pasta Prep Cook to join our Back of House team. This role is ideal for someone with a passion for Italian cuisine, attention to detail, and a commitment to culinary excellence.

 

As a Pasta Prep Cook, you will be responsible for preparing fresh pasta and related ingredients in accordance with established recipes and quality standards. You will use traditional and modern techniques to ensure consistency, flavor, and presentation, while maintaining the highest standards of food safety and hygiene.

 

What You’ll Do

  • Prepare, portion, and cook pasta and related dishes according to standardized recipes.
  • Execute a variety of cooking methods and techniques with precision.
  • Ensure all ingredients meet freshness and quality standards; rotate stock appropriately.
  • Have ingredients prepped and ready to go daily.
  • Assist in the preparation of food for other kitchen departments as needed.
  • Prepare salads, cold appetizers, dressings, and vinaigrettes.
  • Plate cold dishes with attention to portion, temperature, and presentation.
  • Maintain cleanliness and organization of cold stations, refrigerators, and freezers.
  • Operate kitchen equipment safely and according to manufacturer instructions.
  • Maintain a clean and sanitary work area, including countertops, utensils, and equipment.
  • Follow all food safety and hygiene regulations.
  • Report any equipment malfunctions or safety concerns to the chef on duty.
  • Communicate effectively with chefs and team members.
  • Ensure a smooth handoff to the next shift by following closing procedures and checklists.

 

Qualifications

  • Minimum 1 year of kitchen experience, including food handling, prep, or line work.
  • Food Safety Certification is required.
  • Familiarity with pasta preparation and cold line operations.
  • Experience in a fine dining or high-volume kitchen.
  • Knowledge of Italian cuisine and fresh pasta techniques.
  • Bilingual in English and Spanish is a plus.

 

Working Conditions

  • Must be able to stand for extended periods and perform repetitive tasks.
  • Ability to lift up to 45 lbs. and work in hot, cold, and fast-paced environments.
  • Operates kitchen and office equipment as needed.
  • Availability required for lunch and dinner shifts, including nights, weekends, and holidays.
  • Expected to work 35+ hours per week, with flexibility based on business needs.
