Pantry Cook – Fine Dining Italian Restaurant
We are looking for a detail-oriented and motivated Pantry Cook to join our Back of House team. This role is essential to the preparation and presentation of cold dishes, salads, and appetizers that meet our high standards of quality, flavor, and presentation.
As a Pantry Cook, you will be responsible for preparing cold menu items according to established recipes and standards. You will ensure that all ingredients are fresh, properly stored, and handled with care. This role requires a strong understanding of food safety, attention to detail, and the ability to work efficiently in a fast-paced, team-oriented kitchen.
What You’ll Do
- Prepare salads, cold appetizers, dressings, vinaigrettes, dips, and herb-infused oils.
- Follow standardized recipes and portion guidelines to ensure consistency.
- Perform meal prep tasks such as chopping vegetables, slicing meats, and washing produce.
- Assemble and plate cold dishes with precision, ensuring proper temperature, portion, and presentation.
- Prepare food for the next shift and following day as directed by the chef.
- Inspect ingredients for freshness and quality; rotate stock to minimize waste.
- Store all food items in proper containers and at correct temperatures.
- Follow all food safety and hygiene regulations in compliance with local and international standards.
- Maintain cleanliness and organization of workstations, coolers, and storage areas.
- Report any equipment malfunctions or safety concerns to the chef on duty.
- Work closely with the chef and kitchen team to fulfill daily prep and service needs.
- Participate in pre-shift briefings and communicate supply needs or issues.
- Ensure a smooth handoff to the next shift by following closing procedures and checklists.
- Support other kitchen departments as needed with prep or cold items.
Qualifications
- Minimum 6 months of experience in a professional kitchen.
- Food Safety Certification is required.
- High school diploma or equivalent.
- Familiarity with cold line operations and pantry station responsibilities.
- Experience in a fine dining or upscale restaurant setting.
- Knowledge of Italian cuisine and ingredients.
- Ability to work multiple stations and assist with prep for other departments.
Working Conditions
- Must be able to stand for extended periods and perform repetitive tasks.
- Ability to lift up to 40 lbs. and work in cold environments (coolers, freezers).
- Operate kitchen equipment such as slicers, mixers, and blenders.
- Availability required for lunch and dinner shifts, including weekends and holidays.
- Expected to work 35+ hours per week, with flexibility based on business needs.
