Job Description

Constance Ephelia, a luxurious resort in the Seychelles, is seeking a talented and passionate Sous Chef specialising in Mediterranean cuisine to join our culinary team. As the Sous Chef, you will play a crucial role in creating exceptional dining experiences for our discerning guests, showcasing the vibrant flavours and healthy ingredients of Mediterranean cuisine.

  • Assist the Head Chef in overseeing daily kitchen operations, ensuring the highest standards of food quality and presentation
  • Develop and implement innovative Mediterranean-inspired menus, incorporating local and seasonal ingredients
  • Train, mentor, and supervise kitchen staff, fostering a collaborative and efficient work environment
  • Ensure compliance with food safety and hygiene standards, maintaining a clean and organised kitchen
  • Manage inventory, control food costs, and minimise waste while maintaining quality
  • Collaborate with other departments to enhance guest satisfaction and contribute to the overall success of the resort
  • Step in for the Head Chef when necessary, demonstrating strong leadership and decision-making skills

Qualifications

  • Culinary degree or diploma from a recognised institution
  • Minimum 3-5 years of experience as a Sous Chef or in a similar role, preferably in luxury resorts or high-end restaurants
  • Extensive knowledge of Mediterranean cuisine, ingredients, and cooking techniques
  • Proven experience in menu planning, kitchen management, and team leadership
  • Strong organisational skills with the ability to multitask in a fast-paced environment
  • Excellent communication skills in English; knowledge of additional languages is an advantage
  • Current food safety certification
  • Passion for culinary excellence and commitment to delivering exceptional guest experiences
  • Ability to work flexible hours, including evenings, weekends, and holidays
  • Experience in tropical or island environments is desirable
