Job Description

Constance Ephelia, a luxurious resort in the Seychelles, is seeking a highly skilled Sommelier Cost Controller to oversee our extensive wine cellar. This role combines the expertise of a sommelier with the analytical skills of a cost controller, ensuring the optimal management of our wine inventory and costs.

  • Manage and maintain the resort's wine cellar, ensuring proper storage and organisation of wine inventory
  • Conduct regular wine tastings and make informed recommendations for wine list updates
  • Analyse wine sales data and market trends to optimise pricing and maximise profitability
  • Implement and maintain effective cost control measures for the wine programme
  • Collaborate with the Food and Beverage team to create wine pairings for menus and special events
  • Train staff on wine knowledge, service standards, and upselling techniques
  • Oversee wine purchasing, negotiating with suppliers to ensure the best quality and value
  • Prepare regular reports on wine inventory, sales, and costs for management review
  • Ensure compliance with all relevant regulations and internal policies regarding alcohol service and storage

Qualifications

  • Bachelor's degree in Hospitality Management, Business Administration, or a related field
  • Minimum 3-5 years of experience as a sommelier, preferably in a luxury hotel or resort setting
  • Proven experience in cost control or financial management within the hospitality industry
  • Advanced knowledge of wines, wine-making processes, and global wine regions
  • Strong analytical and mathematical skills with proficiency in Microsoft Office suite, especially Excel
  • Experience with inventory management systems and practices
  • Excellent communication skills and fluency in English; additional languages are advantageous
  • In-depth understanding of wine market trends and pricing strategies
  • Familiarity with luxury hospitality standards and practices
  • Strong attention to detail and ability to work efficiently in a fast-paced environment
  • Willingness to work flexible hours, including evenings and weekends as required
