Job Description

Constance Ephelia, a luxurious resort in the Seychelles, is seeking a talented and passionate Sous Chef to join our fine dining restaurant team. You will play a crucial role in maintaining our high standards of culinary excellence and guest satisfaction.

  • Assist the Head Chef in overseeing daily kitchen operations and menu planning
  • Ensure the highest standards of food quality, presentation, and hygiene are consistently met
  • Develop and implement new menu items, keeping abreast of current culinary trends
  • Train, mentor, and supervise kitchen staff, fostering a positive and productive work environment
  • Manage inventory, control food costs, and maintain proper stock levels
  • Collaborate with the front-of-house team to ensure seamless service and guest satisfaction
  • Uphold and enforce all food safety and sanitation regulations
  • Step in for the Head Chef when necessary, assuming full kitchen leadership

Qualifications

  • Culinary degree or diploma from a recognised institution
  • Minimum 3-5 years of experience in fine dining establishments, with previous experience as a Sous Chef or in a similar leadership role
  • Advanced knowledge of culinary techniques, menu planning, and kitchen management
  • Proven ability to lead and motivate a team in a fast-paced environment
  • Strong organisational skills with attention to detail
  • Excellent communication skills in English, both verbal and written
  • Proficiency in food safety and hygiene standards, with relevant certification
  • Creative flair and passion for innovative cuisine
  • In-depth knowledge of international cuisines and fine dining trends
  • Experience with inventory control and cost management
  • Ability to work under pressure and adapt to changing situations
  • Willingness to relocate to the Seychelles
