About the Role

We’re seeking a passionate and proactive Senior Sous Chef to join our leadership team and help drive the continued success of ARU. In this pivotal role, you’ll lead and inspire the kitchen team while upholding the highest standards in food quality and execution.

We’re looking for a proven leader with experience managing high-performing teams in fast-paced, high-end environments. A commitment to excellence, creativity and strong organisational skills are essential.

Your day-to-day will include:

  • Collaborate with the Head Chef to develop innovative, seasonal menu items that reflect ARU’s culinary vision, while accommodating guest preferences and dietary requirements.
  • Oversee daily food preparation, ensuring correct cooking techniques, portion control, and adherence to established recipes. Monitoring quality and consistency of dishes to meet or exceed guest expectations.
  • Maintain high standards of quality and consistency to meet or exceed guest expectations.
  • Support staff training, mentoring junior chefs and kitchen hands
  • Uphold strict hygiene standards, maintaining a clean, safe, and organised kitchen while enforcing rigorous food safety and quality control measures.
  • Working closely with other chefs and front of house staff to ensure seamless coordination and timely execution of all food orders, maintaining a high level of efficiency during peak periods.

Our successful candidate will have:

  • Minimum two years’ experience as a Senior Sous Chef in a venue of a similar calibre.
  • Certificate III in Commercial Cookery or higher.
  • Exceptional knowledge of food preparation techniques and kitchen equipment.
  • The ability to adapt and lead in high-pressure service periods.
  • Strong attention to detail and a passion for delivering exceptional culinary experiences.
  • A grounding in Asian cuisine (Preferred)
  • Experience with Solid Fuel Cooking (Preferred)
  • Good knowledge of cost control, stock management, and food safety standards
  • Excellent Leadership and communication skills.
