We are looking for a Restaurant Manager - Petrus based at Island Shangri-La, Hong Kong!

 

As a Restaurant Manager - Petrus, we rely on you to: 

  • Oversee the day-to-day operations of the premium restaurant; co-ordinate with the Chef in sections appointed on planning of promotions, menu planning, budget forecast & control and staff training
  • Provide leadership and direction to staff in delivering excellent service which align with Hotel service standards, exceed guests’ expectation and review guests' comment
  • Drive and accountable for the business results of the restaurant to maximize the profit
  • Work closely with F&B Team and Marketing Team on food promotions, marketing programming, cost effective and seasonal menu planning
  • Create new ideas and recommend changes to constantly improve our service standards
  • Conduct / attend F&B divisional and departmental meetings as required
  • Ensure that all materials, equipment and machinery are properly used and regularly cleaned, in order to prolong usage
  • Ensure general maintenance of sections appointed and follow up on work order forms with Engineering department
  • Review guest feedback / critique forms / outlet log books on operational issues / P&L statement

 

 We are looking for someone who has:

  • Diploma in Hotel Management with a minimum of 5 years of work experience in fine dining restaurant at prestigious hotels or organization; preferably experience in awarded fine dining restaurant
  • Sound knowledge of food and beverages and strong sense of market trends
  • Knowledge of wine at WSET certification is preferable
  • Proven records in managing high-end catering events with strong knowledge of fining dining service skills
  • Have integrity, is trustworthy, dependable, responsible and accountable
  • Have a keen eye for detail and seek for improvements
  • Excellent command of English and Cantonese
