Production Lead Chef

Our recently opened production facility in Seaford continues this tradition, serving as the base for our Southern Family Foods brand of retail sauces, rubs and small goods production as well as being home to our increasingly popular Pit Stop American BBQ Quick Service Restaurant. Our facility in Seaford is equipped with cutting-edge food production equipment with a focus on scaling sustainably and growing the brand across a diverse set of offerings. About You:

The ideal candidate has experience in bulk food production and manufacturing and is passionate about process and organisation. As a seasoned professional your ability to juggle competing demands with a focus on quality and accountability is what you do. We are looking for people with the following experience:

• At least 5 years leading fast paced, high volume kitchens or production facilities.
• Qualifications that reflect your passion and excellence in the areas above.
• Experience in fast paced, high volume kitchens
• Ability to work autonomously with initiative
• Excellent organisation skills and the ability to train junior staff
• Proven experience in supporting process that creates improvements
• Excellent communication skills, attitude and be a team player
• Able to remain calm under pressure, fostering a collaborative and productive team energy
• Capacity to negotiate varied demands and pressures through process and organisation.
• You are continually striving for excellence, developing and perfecting it

About the Opportunity:

Southern Family Foods & Red Gum BBQ is seeking a Production Chef to lead our Production kitchen and the delivery of our At Home & Kitchen ranges. You will also lead the team of our Red Gum BBQ Pit Stop, our on site BBQ Quick Service Restaurant. The ideal candidate would have experience in planning, running and maintaining all aspects of the back of house commercial operations specifically:

• Support the development of Southern style cuisine that are of the highest standard and further develop our reputation as a world-renowned BBQ brand.
• Leading diverse food operations from production, catering, events, take away and fast paced kitchens.
• Knowledge of spreadsheets and contributing to financial and procedural reporting.
• Participate in leadership meetings that develop the BOH team strategically and logistically.
• Knowledge of Food Service Programs and HACCP preferred.
• Contribute innovative ideas and solutions as part of the broader Leadership Team.
• Running and delivery of day to day activities of the back of house operations
