Job Description

Pastry & Dessert Creation

  • Prepare, bake, and present a range of Portuguese desserts and pastries, including traditional and modern interpretations.
  • Develop and test dessert recipes, ensuring consistency, quality, and cost control.
  • Create dessert menus, daily specials, and seasonal offerings in collaboration with the Head Chef.
  • Participate in menu tastings and sampling sessions.

Kitchen & Pastry Operations

  • Manage the pastry section of the kitchen, ensuring efficient prep and service.
  • Maintain high standards of hygiene, food safety, and cleanliness within the pastry area.
  • Control stock, ingredients, and ordering specific to the pastry section.
  • Ensure correct storage and handling of ingredients and finished products.

Quality & Presentation

  • Ensure all desserts meet the restaurant’s quality, taste, and presentation standards.
  • Maintain consistency in portioning and plating.

Collaboration & Teamwork

  • Work closely with the Head Chef and Sous Chef to ensure dessert offerings complement the overall menu.
  • Support kitchen operations during peak periods where required.



Requirements

Requirements & Experience

  • Proven experience as a Pastry Chef or Pastry Sous Chef.
  • Knowledge of Portuguese pastries and desserts (e.g. pastéis, custards, cakes, and traditional sweets) is highly advantageous.
  • Strong baking, pastry, and dessert presentation skills.
  • Understanding of food safety, hygiene, and pastry-specific storage requirements.
