Job Description

Constance Ephelia , a luxurious resort in the Seychelles, is seeking a talented and dedicated Night Shift Chef de Partie to join our culinary team. As a key member of our kitchen staff, you will be responsible for overseeing a specific section of the kitchen during night-time operations, ensuring the highest standards of food quality and presentation.

  • Manage and coordinate all culinary activities within your assigned section during night shifts
  • Prepare and cook dishes according to menu specifications, maintaining consistency and quality
  • Collaborate with the Executive Chef and Sous Chef to develop new menu items and improve existing recipes
  • Ensure compliance with food safety and hygiene standards at all times
  • Supervise and train junior kitchen staff in your section
  • Manage inventory and stock levels, placing orders when necessary
  • Assist in menu planning and cost control measures
  • Maintain a clean and organised kitchen environment
  • Adapt to the unique challenges of working in a tropical island resort setting

Qualifications

  • Culinary Certificate or diploma from a recognised institution
  • Minimum 2-3 years of experience as a Chef de Partie or in a similar role
  • Proven experience in luxury hotel or resort kitchens preferred
  • Strong culinary expertise and knowledge of international cuisines
  • Proficiency in menu planning, food preparation, and presentation techniques
  • Excellent understanding of food safety and hygiene standards
  • Valid food safety certification
  • Ability to operate various kitchen equipment efficiently
  • Strong time management and organisational skills
  • Effective team collaboration and leadership abilities
  • Knowledge of dietary restrictions and allergen management
  • Flexibility to work night shifts and adapt to a tropical island environment
  • Fluency in English; additional languages are an advantage
