Restaurant Manager - Wine Program Lead | The Bygone

We're seeking a dynamic Restaurant Manager who will lead our floor operations while stewarding one of the city's most prestigious wine cellars, featuring over 600 labels with a celebrated focus on Burgundy and premier producers from around the world.

This unique role combines operational leadership with wine program management—perfect for a hospitality professional who excels at leading teams through service while maintaining the integrity of a world-class wine collection. What You'll Do:

Lead the floor with finesse – Maintain a commanding yet approachable presence during service, ensuring seamless operations and exceptional guest experiences

Master the wine program – Oversee inventory management, list curation, and pricing for our 600+ label cellar, with special attention to our Burgundy collection and allocated wines

Educate and inspire – Develop and conduct regular wine training sessions for the service team, building confidence and knowledge across all levels

Close with precision – Handle nightly operations including guest checkouts, cash reconciliation, tip management, reporting, and team accountability

Be the go-to leader – Support FOH team members through coaching, real-time feedback, and hands-on assistance wherever needed

Manage the details – Maintain wine inventory systems, track costs and margins, coordinate with suppliers, and ensure proper storage conditions

Act as Manager on Duty – Take full ownership when senior management is away, making decisions with confidence and care

Drive continuous improvement – Participate in weekly manager meetings, contributing operational insights and wine program updates

Create memorable moments – Guide guests through wine selections, coordinate special tastings, and ensure every bottle is presented with the reverence it deserves

What You Bring to the Table:

  • 3-5 years of restaurant management experience in fine dining, preferably with wine program oversight
  • Strong wine knowledge with formal training preferred (Court of Master Sommeliers, WSET, or equivalent)
  • Proven ability to lead and develop teams in high-volume, high-touch environments
  • Experience with inventory management, cost control, and vendor relationships
  • Exceptional communication skills—able to train staff and engage guests with equal effectiveness
  • Proficiency with restaurant technology platforms (POS, inventory systems, reporting tools)
  • Physical stamina to navigate between dining room and wine storage throughout service
  • A passion for hospitality that shows in every interaction
  • Bonus points for specific knowledge of Burgundy and experience with allocated wine programs
