Join our team in Amanjena. Inspired by the rose-hued buildings of old Marrakech, palatial Amanjena is close to the fabled Red City, set in its own expanse of gardens and grand open spaces. Shaded courtyards with fountains lead to the central basin, bordered by spacious standalone Pavilions & Maisons, many with private pools. Views stretch across the olive groves and palms of the oasis, extending to the High Atlas Mountains on the horizon.
Role
We are looking for a dedicated, knowledgeable, and service-oriented Sommelier to oversee the wine program at Amanjena. The ideal candidate will bring a refined palate, a deep passion for oenology, and a talent for storytelling that enhances our guests’ dining experience. Working closely with the culinary and service teams, the Sommelier will be responsible for curating and managing the wine selection, delivering thoughtful pairings, and providing a consistently elevated standard of service.
Responsibilities
Curate and maintain a dynamic and balanced wine list, reflecting both international classics, Italian and local Moroccan wines, with a strong focus on quality, seasonality, and culinary harmony.
Offer personalized wine recommendations to guests, demonstrating deep product knowledge and an intuitive understanding of their preferences and the menu.
Provide ongoing training and mentorship to the service team, ensuring consistency and confidence in wine service across all outlets.
Manage wine inventory with precision, including purchasing, receiving, storage, rotation, and stock levels, in collaboration with the purchasing and finance teams.
Foster relationships with trusted wine producers, distributors, and local suppliers, staying updated on new vintages, rare bottles, and emerging trends.
Uphold Aman’s service standards by ensuring every interaction reflects warmth, discretion, and professionalism.
Ensure all wine service complies with local health, safety, and licensing regulations.
Requirements
Proven experience as a Sommelier or Head Wine Steward in a fine dining or luxury hotel environment.
Certification from an internationally recognized wine institution (WSET Level 2 or higher, Court of Master Sommeliers, or equivalent).
Strong knowledge of both Old and New World wines, with an appreciation for Italian wines.
Passion for guest service, with excellent interpersonal and communication skills.
Attention to detail, refined organizational abilities, and a proactive attitude.
Ability to work collaboratively within a multicultural, multilingual team.
Proficiency in English and French
Well-groomed appearance and a natural sense of elegance and discretion.
