About the role
SRG Hospitality are looking for Head Sommeliers to join our teams across our flagship venues. In this full-time role, you will be working alongside our Group Beverage Manager to curate and manage our award-winning wine lists. Our restaurants are renowned for their world-class dining experience, and your expertise will be crucial in delivering a premium service to our discerning guests.
What you’ll be doing
- Working alongside the Group Beverage Manager to manage all aspects of the restaurant’s wine program, including selecting, purchasing, and maintaining a diverse and high-quality wine list.
- Train, supervise, and mentor the front of house team to ensure exceptional wine service and product knowledge.
- Provide wine recommendations and pairings to guests, ensuring a seamless and memorable dining experience.
- Manage the wine cellar’s inventory, budgets, and procurement processes in-line with targets.
- Collaborate with the culinary team to create innovative food and wine pairings
What we’re looking for

Extensive experience (2+ years) as a Head Sommelier or Senior Sommelier in a high-end, fine-dining restaurant.
- Exceptional knowledge of wine regions, varieties and producers, with the ability to communicate this knowledge to guests in a compelling and engaging manner.
- Proven track record of curating and managing a prestigious wine program, including sourcing, purchasing, and inventory management.
- Strong people management skills, with the ability to train, motivate, and lead a team of sommeliers.
- Excellent customer service skills and the ability to provide a memorable dining experience for guests.
- Relevant qualifications, such as a WSET Level 3 or CMS Certified, are highly desirable
