The Senior Sushi Chef is responsible for leading the sushi section of Baoli kitchen, ensuring the highest quality of sushi preparation, presentation, and taste. The role includes overseeing kitchen operations, maintaining food safety standards, and mentoring team members to deliver exceptional culinary experiences in line with the brand’s standards. Principal Accountabilities Ensuring that the Sushi section is prepared and ready for service at each meal period. Supervise and lead the sushi team, ensuring smooth kitchen operations during service. Provide training and mentoring to junior sushi chefs, fostering growth and skill development. Prepare and present sushi, sashimi, and related dishes with precision and creativity, ensuring consistency in taste and quality. Develop and maintain unique sushi recipes and innovative plating styles to enhance guest experience. Source and handle the freshest ingredients, ensuring their quality and proper storage. Collaborate with the Head Sushi Chef to design and refine the sushi menu, incorporating seasonal and market trends Ensuring correct handling and basic maintenance is carried out for all machinery and tools in the Sushi section Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety. Expertly cutting, slicing, and filleting different types of fish. Handles a wide range of raw fish and other ingredients. Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi and soy sauce, when appropriate Manage food prep activities, like boiling rice. Monitor inventory levels of sushi-related ingredients and supplies, ensuring accurate stock management. Work closely with the purchasing team to source high-quality ingredients at optimal costs.
