About the Venue:

Ascend to the fifth floor for Delta Rue, a lavish and bustling restaurant blending Vietnamese and French influences. Delta Rue evokes the faded old-world elegance of Hanoi’s Old Quarter in the 1920s, featuring a 150-seat interior opening to a verdant terrace that seats an additional 60 guests. At the entrance, the champagne bar provides a sparkling welcome with French bubbles before guests are seated. But it’s the bold Vietnamese flavours that will truly shine. 

About the Role:

As Senior Sous Chef, you will assist the Executive Chef and Head Chef in managing the kitchen team to maximise food profitability. You’ll work closely with the Head Chef to oversee food preparation, production, and the implementation of innovative menus designed to deliver exceptional culinary experiences that captivate guests and showcase the best of contemporary dining.

Job Description

Requirements for the Role:

  • Creative flair with an eye for current food trends, update menus regularly  
  • Thrive in a large, busy, and fast-paced work environment with strong organisational skills, time management, and attention to detail. Wok/Grill experience is a must
  • Passionate about cooking with a focus on food quality and presentation
  • True passion and experience with Southeast Asian Cuisine
  • Maintain food costs within budget through careful preparation, service, and storage. Plan, order ingredients, and food supplies within the budget
  • Ability to create detailed recipe cards
  • Strong leadership skills, with the ability to train and inspire team members
  • Experience in hatted restaurants is a plus
  • Keen eye for detail and quality control
  • Strong communication skills; able to follow directions and work well within a team

Qualifications

Skills required

  • At least 5 years of work experience as a sous chef or head chef
  • Formal qualification in Cookery
  • Southeast Asian Cuisine Specialist
