Oversee cleaning and sanitization of all kitchen utensils, dishware, cookware, and equipment.
Ensure all stewarding duties are performed as per hotel hygiene standards and SOPs.
Assist in the operation of dishwashing machines and maintain proper use of cleaning chemicals.
Monitor cleanliness of garbage bins, drainage, and waste segregation areas.
Lead and guide kitchen stewards during shifts, assigning tasks and monitoring performance.
Train junior team members on hygiene standards, safety practices, and proper cleaning procedures.
Ensure daily cleaning checklists and logs are completed accurately.
Report equipment malfunctions, leaks, or damages to the Stewarding Supervisor or Engineering.
Monitor stock levels of cleaning supplies, chemicals, and tools, and report shortages.
Ensure proper storage of cleaning agents and kitchen tools to avoid contamination or hazards.
Ensure the stewarding team follows food safety regulations (HACCP or local standards).
Maintain strict adherence to personal hygiene, PPE use, and sanitation protocols.
Support fire safety, accident prevention, and emergency response procedures in the kitchen areas.
