Job Summary:

 

The Pastry Sous Chef at Black Desert Resort is responsible for assisting the Pastry Chef in overseeing the pastry department and ensuring the highest quality of pastry and dessert production. This position reports to the Pastry Chef and plays a crucial role in maintaining the resort’s reputation for exceptional culinary experiences.

Salary Range: $55,000 - $65,000
This is the pay range we reasonably expect to pay for this position. Individual compensation decisions are based on a variety of factors.

Responsibilities

  • Assist the Pastry Chef in managing the day-to-day operations of the pastry department.
  • Oversee the preparation and production of all pastries, desserts, breads, and other baked goods.
  • Ensure that all pastry items meet the resort’s high standards of quality, taste, and presentation.
  • Develop and test new pastry recipes and menu items, contributing to innovative and seasonal offerings.
  • Train, mentor, and supervise pastry staff, ensuring adherence to recipes and techniques.
  • Monitor inventory levels and order supplies as needed, maintaining proper stock and minimizing waste.
  • Ensure compliance with health and safety regulations and maintain a clean and organized kitchen.
  • Collaborate with other chefs and kitchen staff to coordinate pastry production with overall kitchen operations.
  • Assist with the planning and execution of special events, banquets, and catering functions.
  • Maintain accurate records of production, inventory, and staff schedules.
  • Participate in kitchen meetings and training sessions to stay updated on new techniques and industry trends.
  • Perform other duties as assigned by the Pastry Chef or Executive Chef.

Qualifications

  • Minimum of 5 years of experience in a professional pastry kitchen, with at least 2 years in a supervisory role.
  • Strong knowledge of pastry techniques, ingredients, and kitchen equipment.
  • Creative and innovative approach to pastry and dessert creation.
  • Excellent communication and leadership skills.
  • Ability to work efficiently under pressure and manage multiple tasks.
  • Attention to detail and commitment to maintaining high standards of quality and cleanliness.
