What You'll Do

The talented Pastry Chef de Partie will be responsible for delivering high-quality, consistent food and professional service to restaurant guests, ensuring all pastry and bakery items meet the Chef's standards. You will also be responsible for building and maintaining a strong relationship with your coworkers.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Supervise all pastry and bakery production for our Restaurants, in accordance with standards of quality, quantity control, taste and presentation as established by the Senior Management
  • Maintain communication with the Pastry chef and culinary leaders.
  • Create and maintain a sound working relationship with all preparation personnel.
  • Review restaurant reservations and banquet event orders on a daily basis in order to ensure adequate preparation of pastry items.
  • Report to the Pastry Chef any maintenance or repairs needed.
  • Ensure that all recipes are executed to provide maximum profitability.
  • Review all pertinent food and beverage requisitions, inter-kitchen transfers and production quantities, and verifies all special food requests with the Pastry Chef.
  • Prevent the spoiling and contamination of foods by enforcing proper sanitation practices and ensuring compliance with policy and health regulations.
  • Inspect delivery of food to ensure the highest level of quality
  • Make menu recommendations to the Pastry Chef for future menu development, holidays, special events and promotions.
  • Supervise the development of daily specials.
  • Introduce special plated desserts and tests new items.
  • Ensure a variety of menu items offering local and seasonal specialties.
  • Demonstrate an understanding and commitment to total quality efforts by striving for continual improvement, working cooperatively as a team member and concentrating on both internal and external customers.
  • Comply with departmental policies as well as restaurant rules and regulations and policies set forth in the Employee Handbook and Management.
  • Additional projects and responsibilities may be assigned as needed.

SPECIFIC EXPERIENCE WE'RE SEEKING:

  • 5 years of prior experience within a similar role in luxury 5 star hotels - Michelin Star restaurant experience preferred.
  • Food Handler Certification preferred.
  • Ability to multitask in a dynamic environment.
  • Baking / Pastry Arts degree or completion of a culinary program or equivalent experience.
  • Must have a good understanding of health requirements.
  • Strong computer skills to include: Work, Excel, Power Point, Office and Outlook.
  • A strong foundation of baking and pastry techniques.
  • Must be able to lift 50lbs and stand/walk up to 8 hours.
  • Strong creative organization and problem solving skills.
  • Ability to communicate written and verbally in English.
  • Strong skills in Wedding Cake & Entremets production, Chocolate Decorations & Showpieces and Banquet setups.
  • This position requires a flexible schedule, must be able to work evenings, weekends, and holidays.

The hourly pay for this role is USD $13.00 per hour plus gratuities.  We offer a comprehensive package of benefits including paid time off, medical/dental/vision insurance, pension, meal per shift, and many other benefits to eligible employees.
