Summary:

The Pastry Chef of ROKI Collection is responsible for managing and supervising the pastry section of the kitchen, ensuring that all preparation and cooking is of the highest standard and that the dishes are delivered to the customers quickly and efficiently. The Pastry Chef will manage their department and will also work closely with the Director of Culinary to create new dishes, design menus and manage the kitchen staff. The role will be a full-time permanent role with a rostered 40 hour working week.

  • Position Overview
  • We are seeking an experienced and creative Pastry Chef to join our culinary team. The ideal candidate will bring passion, precision, and innovation to the pastry section, delivering beautifully crafted desserts, breads, and baked goods that reflect the refined, local essence of the ROKI Collection brand.
  • Key Responsibilities
  • Lead the preparation and presentation of all pastry and dessert items to the highest standards.
  • Develop seasonal menus and specialty offerings aligned with ROKI Collection’s culinary direction.
  • Oversee daily pastry production, including breads, cakes, petit fours, and plated desserts.
  • Ensure consistency in taste, texture, and visual presentation across all pastry offerings.
  • Manage inventory, ordering, and cost control of pastry ingredients.
  • Maintain cleanliness and hygiene in the pastry kitchen, complying with all food safety standards.
  • Collaborate with the Executive Chef and F&B team to enhance overall guest experience.
  • Train, mentor, and manage junior pastry team members.

    Qualifications:

    • Level 3 certificate in Cookery or at least 2 years’ experience as a Pastry Chef in a busy fine dining kitchen
    • Excellent cooking and food preparation skills
    • Good communication and leadership skills
    • Ability to work under pressure and handle multiple tasks simultaneously
    • In-depth knowledge of culinary techniques and foods
    • Good understanding of hygiene and food safety principles.
