The Assistant Head Sommelier is expected to work on the restaurant floor during restaurant operating hours. The Assistant Head Sommelier will be eligible to participate in the tip pool with wine captains and wine runners. The Assistant Head Sommelier supports the Head Sommelier and is integral to maintaining and growing our award‑winning wine programs. When clocked in under the admin rate, the Assistant Head Sommelier’s responsibilities include but are not limited to:

  • Assisting the Head Sommelier and National Director of Wine & Beverage (NDWB) in maintaining the standards of the wine program appropriate for the property and region.

  • Supporting relationships with suppliers and distributors to help secure allocations, rarities, and current release wines via email, phone, or tasting appointments during allocated working hours.

  • Following budgets and guidelines set by NDWB and Head Sommelier for all wine purchases.

  • Helping maintain the Master spreadsheet to ensure accuracy of wines, vintages, and pricing as set by NDWB.

  • Contributing to the service recap within working hours.

  • Assisting with the maintenance of the purchase sheet as provided by NDWB.

  • Upholding the vision, accuracy, and cleanliness of the wine lists in collaboration with the Head Sommelier.

  • Assisting with adding new wines to the list, changing vintages, updating pricing, ensuring formatting and spelling are correct, with oversight from NDWB and the Head Sommelier.

  • Supporting the maintenance of wine features where appropriate.

  • Helping with weekly wine list updates and reprints to account for 86’s, vintage changes, new wines, and overall cleanliness.

  • Communicating Micros needs and changes to a manager as necessary.

  • Collaborating with guests and managers to assist in wine selections for private event clients.

  • Supporting NDWB, Marketing, and the Head Sommelier with wine events and activations.

  • Participating in the monthly inventory of all wine and assisting with inventory reconciliation.

  • Actively participating in monthly wine education.

  • Assisting in the organization of weekly wine shipments.

  • Helping maintain cleanliness and organization of all wine locations.

  • Tracking and reporting flawed bottles.

  • During the course of employment, the Assistant Head Sommelier may be shadowed by new employees at the determination of the leadership team.

  • Following the guidelines and leading by example as set forth by beverage directions to maintain technique and service standards.

Qualifications

Qualifications – What You Will Bring to the Table:

  • A strong knowledge of wine with the ability to pair wines with menu items

  • A professional and confident demeanor

  • A natural ability to educate guests and exhibit expertise without being overly sales‑focused

  • A sensitive palate and extraordinary sense of smell

  • Quick to respond to complaints and unusual service situations, always prioritizing guests’ needs

  • Team‑oriented – willing to support service captains and the Head Sommelier on the floor

  • Ability to move and lift up to 25 lbs. Standing, sitting, or walking for extended periods and maintaining a professional appearance in a clean uniform are required.
