The Junior Sous Chef’s primary responsibility is to assist the Sue Chef and Head Chef in managing kitchen operations, supervising staff, and ensuring the consistent preparation of high-quality seafood dishes. The ideal candidate will provide leadership, maintain a well-organized kitchen, and support the development of innovative menu items.

Duties and Responsibilities:

  • Obtain a thorough working knowledge of all seafood dishes, preparation techniques, and kitchen procedures.
  • Supervise and assist in the preparation and presentation of seafood dishes, maintaining quality and consistency.
  • Assist with opening and closing duties, such as organizing kitchen stations, checking inventory, and ensuring cleanliness.
  • Oversee the stocking of seafood, ingredients, and supplies while minimizing waste.
  • Ensure compliance with food safety and sanitation standards across all kitchen operations.
  • Train and mentor kitchen staff, fostering a positive and professional work environment.
  • Lead the kitchen team during service and step into the Sue Chef’s role when required.
  • Collaborate with the Sue and Head Chef on menu development, daily specials, and creative ideas.
  • Monitor kitchen equipment and coordinate maintenance or repairs when necessary.
  • Communicate courteously and effectively with staff and management to ensure smooth kitchen operations.
  • Maintain hygiene and grooming standards


Benefits

·       Paid Annual Leave – Employees are entitled to one (1) week every six (6) months or two (2) weeks annually.  
·       Paid Sick Leave – Employees who complete six (6) months of employment are entitled to one (1) week annually. A Doctors Letters must be provided. 
·       Paid Maternity Leave – Female employees who complete one (1) year employment are entitled to thirteen (13) weeks max maternity leave. This time can be taken at any time during pregnancy or post-partum.  
·       Paid Compassionate Leave - Employee with at least six (6) months employment are entitled to three (3) days compassionate leave. Applicable to deaths of immediate family members only. Immediate family members include Mother, Father, Spouse, Child, Grandparents.  
·       Public Holidays: Employees are entitled to double pay on Public Holidays.  
·       Gratuities. These are pooled with all FOH and BOH staff.
