The Chef de Partie’s primary responsibility is to manage a specific kitchen station, prepare seafood dishes to the highest standards, and ensure the station runs efficiently. The ideal candidate will take ownership of their station while supporting the kitchen team and maintaining a clean, organized workspace.

Duties and Responsibilities:

  • Obtain a working knowledge of all seafood menu items and preparation techniques.
  • Prepare and present seafood dishes as per order and pub standards, ensuring consistency and quality.
  • Set up and maintain mise en place, ensuring the assigned station is ready for service.
  • Assist with opening and closing duties, such as restocking the station, cleaning equipment, and organizing supplies.
  • Ensure the station is well-stocked with necessary ingredients and tools.
  • Monitor and ensure all food preparation follows health and safety regulations.
  • Train and guide junior staff working within the station, ensuring they adhere to quality standards.
  • Collaborate with other kitchen stations to ensure timely and smooth service.
  • Contribute to menu development and suggest ideas for daily specials.
  • Maintain hygiene and grooming standards.

·       Paid Annual Leave – Employees are entitled to one (1) week every six (6) months or two (2) weeks annually.  
·       Paid Sick Leave – Employees who complete six (6) months of employment are entitled to one (1) week annually. A Doctors Letters must be provided. 
·       Paid Maternity Leave – Female employees who complete one (1) year employment are entitled to thirteen (13) weeks max maternity leave. This time can be taken at any time during pregnancy or post-partum.  
·       Paid Compassionate Leave - Employee with at least six (6) months employment are entitled to three (3) days compassionate leave. Applicable to deaths of immediate family members only. Immediate family members include Mother, Father, Spouse, Child, Grandparents.  
·       Public Holidays: Employees are entitled to double pay on Public Holidays.  
·       Gratuities. These are pooled with all FOH and BOH staff.
