Job Summary

This is a unique opportunity to work in a professional environment; in one of the best fine dining venues in Malta, Under Grain, a one Michelin star restaurant that is part of the AX Group Privilege brand. You will be involved in the day-to-day operation and the preparation and delivery of exclusive high-end events with no equivalent on the island.

Responsibilities:

  • Design and maintain an outstanding and diverse wine list aligned with the restaurant’s culinary
  • vision.
  • Provide expert wine service and pairings to guests, elevating their dining experience.
  • Train and mentor, the front-of-house team in wine knowledge and service standards.
  • Manage wine inventory, ordering, storage, and stock rotation.
  • Build and maintain strong relationships with wine producers, suppliers, and distributors.
  • Organize wine tastings, guest events, and promotional wine activities.
  • Monitor wine sales and contribute to beverage revenue targets.
  • Ensure compliance with licensing laws, health and safety, and hygiene standards.

Requirements:

  • Minimum of 5 years’ experience in a sommelier role, with at least 2 years in a leadership or head sommelier position.
  • Extensive experience in fine-dining or Michelin-starred environments.
  • WSET Level 3 or higher (Advanced Certificate required; Diploma preferred).
  • Certified Sommelier from the Court of Master Sommeliers or equivalent is highly desirable.
  • Exceptional wine knowledge across old and new world regions, vintages, varietals, and food
  • pairings.
  • Strong leadership and team development skills.
  • Excellent communication and guest service abilities.
  • High attention to detail and commitment to excellence.
  • Strong organizational and time-management skills.
  • Ability to work under pressure and handle high service volumes gracefully.
  • Proficiency in POS and inventory management systems.
