About the Role
As Head Pastry Chef, you’ll take full ownership of our baking operations, from innovative menu planning and production oversight to kitchen management and team leadership. Your main focus is to craft exceptional products, drive operational efficiency, and inspire a team of pastry professionals while aligning with our sales and production goals.
This is a hands-on, leadership-focused position for a chef with both technical excellence and strong business acumen. You’ll be central to evolving our product offerings, streamlining operations, and creating a high-performing, motivated team culture.
Key Responsibilities
Production & Menu Innovation
- Develop and execute innovative, seasonal recipes that align with and elevate the Rollers brand.
- Collaborate with the Venue Manager to achieve sales, wage, and production KPIs.
- Oversee day-to-day kitchen operations, ensuring efficiency and high standards of product quality and presentation.
- Supervise and mentor the pastry team, ensuring consistency and excellence in every bake.
- Collaborated with the marketing team to align new flavour launches with the marketing calendar, seasonal activations, monthly specials, and key event dates.
- Lead R&D, including product testing and technique development in line with industry trends.
Operational Leadership
- Manage ordering, inventory, and supplier relationships with a focus on quality and seasonality.
- Maintain food costs within financial targets while ensuring product integrity.
- Work closely with the Venue Manager to implement cost-effective strategies and drive continuous improvement.
- Maintain high standards of hygiene, cleanliness, and food safety throughout the kitchen.
- Ensure recipe costing and profitability monitoring is conducted regularly.
People & Culture
- Recruit, train, and manage a team aligned with Rollers’ values and production needs.
- Build weekly rosters based on business demands and labour budgets.
- Provide performance feedback, lead regular training, and drive staff development.
- Conduct staff reviews and promote team engagement through clear communication and leadership.
Workplace Health & Safety
- Ensure full compliance with WHS standards and implement safety protocols.
- Support the rollout and ongoing management of a Food Safety System.
- Conduct regular safety checks and respond effectively to incidents or risks.
- Promote a safe, proactive kitchen environment and track safety KPIs.
Qualifications:
- Minimum 5 years’ experience in a similar role or high-volume kitchen environment.
- Certificate III in Commercial Cookery (or equivalent qualification).
- Proven track record of leading kitchen teams and managing production.
- Solid understanding of food cost control, inventory management, and kitchen operations.
- NSW Food Safety Supervisor Certificate (FSS).
- Current First Aid Certificate.
- Strong working knowledge of WHS regulations and best practices.
