About the Role

We are seeking an experienced and passionate Group Head Sommelier to lead and elevate the beverage programs across all venues within the Group, including Restaurants Aru, Antara & Saadi and The Hotel Windsor.

Working closely with the Group Beverage Manager, this role supports venue Sommeliers and FOH teams to ensure consistency, excellence, and innovation across service, systems, and culture.

This is a hands-on leadership role, split between service, administration, and development, requiring regular presence across venues to support standards, training and operational execution.

Key Responsibilities:

  • Uphold and drive the group’s food and beverage standards across all venues
  • Support venue Sommeliers and Bar Managers in executing beverage programs with precision
  • Assist with stock management including deliveries, transfers, cellar organisation, and stock holding
  • Work closely with Purchasing and Finance to ensure accurate stock levels, pricing, and monthly stocktakes
  • Maintain and improve organisational systems, master sheets, and administrative processes
  • Drive sales through premium pours, feature pages, and approachable, guest-focused wine lists
  • Participate in service across venues to oversee standards and identify training needs
  • Assist with wine dinners, lunches, and beverage-led events
  • Ensure compliance with hygiene, safety, fire regulations, and equipment handling standards
  • Lead and execute group-wide beverage training programs
  • Oversee the creation and maintenance of training manuals and procedural guides
  • Foster a strong, inclusive team culture focused on growth, engagement, and excellence
  • Coach and mentor team members, supporting career development and succession planning
  • Promote knowledge expansion, sales techniques, and service confidence across FOH team

Our Successful Candidate Will Have:

  • Extensive experience as a Sommelier in premium hospitality environments
  • Proven experience in purchasing, stock management and supplier negotiation, with a strong understanding of cost control and margins
  • Demonstrated experience in developing and maintaining wine lists and beverage programs across different concepts or venues
  • Ability to multi-task effectively, balancing service, administration, and leadership responsibilities across multiple venues
  • Strong leadership, organisational, and communication skills
  • Commercially minded with a passion for training and cultural development
  • Established relationships within the wine industry; strong supplier and producer connections are highly regarded
  • Sound knowledge of spirits and sake; broader beverage expertise is highly valued
  • Flexibility to work evenings, weekends and public holidays as required.
  • A WSET, CMS or similar wine-related qualification will be highly regarded.
