Position Summary:

Regenta Baywatch Resort, Goa is seeking motivated and passionate Commis Chefs (Level 1, 2, and 3) to join our dynamic kitchen team. You will assist in preparing, cooking, and presenting dishes while maintaining high culinary standards. Your role will depend on your level, from entry-level tasks to managing your own section under supervision. This position is ideal for chefs with a strong interest or experience in Indian, Chinese, Asian, or South Indian cuisines.

Key Responsibilities:

General Responsibilities (All Levels):

  • Assist in daily food preparation across various cuisines (Indian, Chinese, Asian, South Indian).
  • Ensure compliance with hygiene, safety, and cleanliness standards.
  • Follow instructions and recipes as per the senior chefs’ guidance.
  • Maintain cleanliness and organization of workstation and kitchen equipment.
  • Assist in receiving and proper storage of kitchen supplies.

Commis Chef Level-Specific Responsibilities:

Commis Chef 3 (Entry-Level):

  • Perform basic food preparation: peeling, chopping, cutting, grinding.
  • Clean kitchen tools and support senior chefs during service.
  • Learn and adhere to kitchen processes and hotel standards.
  • Assist with mise en place under close supervision.

Commis Chef 2 (Intermediate):

  • Execute simple cooking tasks (frying, sautéing, steaming) with minimal supervision.
  • Begin handling a specific section with guidance.
  • Participate in basic plating and garnishing.
  • Monitor ingredients and report shortages to seniors.

Commis Chef 1 (Advanced):

  • Independently manage a designated kitchen section (e.g., Tandoor, Wok, Dosa, etc.).
  • Guide junior commis staff during prep and service.
  • Maintain consistency, presentation, and portion control.
  • Collaborate with the Chef de Partie on daily specials and buffet offerings.

Preferred Qualifications:

  • 0–3+ years of relevant kitchen experience depending on level.
  • Formal culinary education is preferred but not mandatory.
  • Previous experience in hotel/resort kitchens is an advantage.
  • Basic knowledge of food safety (HACCP) and hygiene standards.
