Little Ruby’s Café brings the spirit of Australian café culture to New York City, serving thoughtfully sourced ingredients, vibrant dishes, and warm, welcoming hospitality. Our Williamsburg location is one of the newest additions to the Ruby’s family, and we are looking for an exceptional Chef de Cuisine (CDC) to lead our Back-of-House operations.
About the Role
The Chef de Cuisine will oversee all BOH operations for the Williamsburg location, ensuring culinary excellence, strong leadership, and seamless kitchen execution. This role works closely with and reports directly to the Corporate Chef to maintain brand consistency while driving innovation, efficiency, and team development.
This is a hands-on leadership role ideal for a chef who thrives in a high-volume, fast-paced environment and is passionate about delivering consistently high-quality dishes.
Responsibilities
BOH Leadership & Team Management
- Oversee all kitchen operations, including prep, line execution, sanitation, and service flow.
- Recruit, train, mentor, and schedule BOH team members.
- Foster a positive, collaborative, and professional kitchen culture.
- Conduct regular line checks, quality assessments, and staff development initiatives.
Culinary Execution & Menu Consistency
- Ensure all dishes meet Ruby’s brand standards for quality, presentation, and taste.
- Work with the Corporate Chef on recipe adherence, menu rollouts, and seasonal updates.
- Monitor food quality throughout all service periods.
Financial & Operational Management
- Manage BOH labor costs, food costs, ordering, and inventory.
- Maintain proper food safety, sanitation, and NYC DOH compliance.
- Ensure equipment maintenance, cleanliness, and safe working conditions.
Collaboration & Communication
- Partner with FOH leadership to ensure smooth service and guest satisfaction.
- Provide regular updates to the Corporate Chef on operations, team performance, and culinary standards.
- Assist in implementing company-wide culinary initiatives and training programs.
Qualifications
- 3+ years experience as a Sous Chef or CDC in a high-volume, chef-driven kitchen.
- Strong leadership, communication, and organizational skills.
- Proven track record in BOH management, cost control, and team development.
- Ability to thrive in a fast-paced environment while upholding high standards.
- NYC DOH Food Protection Certificate required.
Compensation
Salary: $80,000 – $90,000
(Commensurate with experience)
