Chef Enzo Febbraro grew up in his grandmother’s kitchen in Naples and has cooked all over the world, from Paris to Nice, Munich, Madrid, Milan and London. Now more than a quarter-million guests come to Allegro each year to get a taste of his classics, such as lasagna Napoletana, lobster fra diavola with garganelli pasta and shrimp and creamy signature burrata.
The Assistant Chef for Allegro Services is responsible for supporting culinary management in all aspects of cost control, completing inventories and food requisitions, managing and training kitchen staff, supporting the chef de parties and cooks as necessary, supervising the production of food at all stations while ensuring food quality is according to outlet standards. This positions ensures that all government health regulations, industrial safety standards, corporate and departmental policies, and Culinary Bargaining Agreement are followed.
