Job Description

Set in the heart of Melbourne’s vibrant CBD, Oaks Melbourne on Market Hotel offers a premium experience for corporate travellers, leisure guests, and conference groups. We’re now looking for a talented and motivated Sous Chef to join our kitchen leadership team.

As Sous Chef, you’ll play a key role in leading our culinary operations, working closely with the Head Chef to deliver high-quality food across our restaurant, bar, room service, and conference & event spaces. If you’re passionate about food, thrive under pressure, and enjoy mentoring junior chefs—this is the role for you.

Key Responsibilities:

  • Assist the Head Chef in overseeing daily kitchen operations
  • Lead and support the kitchen team to maintain high standards of food preparation and presentation
  • Ensure consistency, quality and portion control across all menu items
  • Maintain food safety, hygiene and OH&S standards at all times
  • Support in rostering, stock control and cost management
  • Collaborate on menu development and seasonal updates
  • Supervise kitchen operations during functions and events

Qualifications

  • Proven experience as a Sous Chef 
  • Strong leadership and mentoring skills
  • Experience in high-volume service, ideally in hotels or function venues
  • Sound understanding of food safety and compliance standards
  • Ability to work across a rotating roster, including nights and weekends
  • Relevant culinary qualifications (Certificate III in Commercial Cookery or equivalent)
  • Food Safety Supervisor Certificate (highly regarded)
