Job Description

The Sommelier supports the Chef Sommelier in managing the hotel’s wine inventory and overseeing daily operations across all outlets and In-Room Dining. He/She ensures that Constance standards are consistently upheld and that the wine list remains internationally reputable by offering a diverse selection across all styles and price ranges. Service delivery must always be professional, refined, and personalised.

Duties and Responsibilities

The responsibilities outlined below include, but are not limited to, the following tasks. Management may also assign additional duties as required.

  • Anticipate business levels by considering seasonal fluctuations, holidays, and resort activities.

  • Conduct regular inspections of all outlet wine-related equipment (decanters, openers, wine lists, refrigerators) to ensure proper upkeep and functionality.

  • Review, refine, and elevate the wine list(s) to achieve award-winning standards recognised by major global publications.

  • Develop and maintain exceptional standards in the presentation, supervision, and control of wine service across all outlets, In-Villa Dining, and Excursions.

  • Build and lead an efficient sales and support team among supervisors and team members.

  • Foster a loyal, motivated team culture focused on delivering the highest level of service.

  • Ensure all outlets and In-Villa Dining consistently present clean, updated wine lists.

  • Assist in preparing the annual wine sales plan and promotion calendar.

  • Finalize and publish the weekly roster six days before the effective date.

  • Comply with all Resort rules and regulations.

  • Conduct regular wine inventories with the Cost Controller and the Assistant Food & Beverage Manager or designated personnel.

  • Identify slow-moving items and recommend appropriate actions.

  • Review wine sales across all outlets on a regular basis.

  • Schedule and oversee monthly staff training sessions.

  • Ensure outlet managers remain informed of current and upcoming house pours, new additions, and projected sales targets.

  • Maintain effective communication with all Resort departments.

  • Build strong working relationships with staff and support their professional development.

  • Keep the Chef Sommelier updated on new wines, trends, and any relevant additions.

  • Coordinate interdepartmental activities as required.

Qualifications

Qualifications:

  • Middle or Secondary Education with additional training or certificates in wine and hospitality.
  • Minimum 3 years of experience in the hotel industry, preferably in luxury resorts or remote island locations.
  • Excellent taste and sense of smell for wine knowledge and quality discernment.
  • Comprehensive understanding of wine lists, cellars, and current industry trends.
  • Strong leadership and team-building skills.
  • Fluency in English; knowledge of a second language is advantageous.
  • Ability to work efficiently in a fast-paced environment and adapt to changing priorities.
