JOB PURPOSE |
The Pastry Sous Chef oversees and manages the pastry production process. He/she is tasked with planning, organizing, and exploring new product developments to ensure comprehensive expertise in pastry craftsmanship. |
RESPONSIBILITIES |
- Assist in preparing, cooking, and decorating pre-cooked, raw, elaborated, frozen, and shaped pastries according to specified instructions and in compliance with set specifications. - Implement brand-specific hygiene procedures and guidelines, ensure adherence to health and safety regulations, and promptly report any discrepancies to higher management. - Review checklists prepared by team members to ensure their effectiveness and take appropriate actions based on the findings. - Supervise and ensure that pastry production meets established standards for quality, timeliness, hygiene, cleanliness, and presentation. - Coordinate with the Front of House staff to stay informed about special events and reservations, preparing accordingly for their needs. - Supervise and monitor the team's performance to ensure achievement of defined objectives and standards. Plan tasks, set deadlines, monitor results and quality, and communicate team requests to higher management. - Coordinate routine orders with storekeepers, follow up with suppliers, receive pastry goods, verify specifications and expiry dates, and ensure proper storage according to established procedures. - Contribute to maintaining the stock of food and necessary items at the pastry station. - Oversee and train team members in all essential duties within the pastry section, ensuring adherence to regulatory standards. |
LANGUAGE & TECHNICAL SKILLS |
Language Proficiency - Fluency in English. - Fluency in Arabic is a plus. Specific Expertise - Knowledge of European pastry specialty items. |
EDUCATION |
Technical degree in Hospitality Management, or a related field. |
EXPERIENCE |
One to two years of experience in F&B Operations, or a similar role. |
