The Role: Senior Pastry Chef

A rare opportunity has arisen for a talented and detail-driven Senior Pastry Chef to join this dedicated culinary team. The ideal candidate will bring creativity, precision, and a genuine passion for patisserie, working with fresh, seasonal ingredients to produce desserts, bakery items, and afternoon tea selections to a consistently high standard.

You will lead a small pastry team, contributing ideas for new dishes and playing a key role in delivering an outstanding food experience across multiple outlets within the hotel.

Key Responsibilities

  • Lead daily pastry operations with focus on quality, consistency, and presentation

  • Prepare a variety of desserts, cakes, tarts, pastries, and afternoon tea components

  • Collaborate with the Head Chef on seasonal menu planning and recipe development

  • Mentor junior team members and contribute to a positive, productive kitchen culture

  • Uphold all food safety, hygiene, and allergen compliance standards

  • Ensure cleanliness and maintenance of all pastry tools and equipment

  • Support breakfast, lunch, dinner, and afternoon tea service across the restaurant and lounge menus

What We’re Looking For

  • Strong background in pastry within high-end hotels, restaurants, or patisseries

  • Experience working at or aspiring toward AA Rosette standards

  • Excellent knowledge of patisserie, chocolate work, and plated dessert presentation

  • Passion for seasonal produce and attention to flavour balance and visual detail

  • Calm, organised, and efficient under pressure

  • Food hygiene certification and formal culinary training preferred

  • A positive, team-spirited approach to leadership and collaboration

Working Pattern

  • 5 days out of 7 per week (including weekends and holidays)

  • Straight shifts on rotation:

    • 7:00am–3:30pm

    • 9:00am–5:30pm

    • 11:00am–7:30pm

    • 1:30pm–10:00pm
