ROLE SUMMARY
Opening this Fall, Delilah Dallas is seeking a Lead Sommelier to serve as the primary ambassador and driving force behind the beverage program. This role requires deep knowledge of wine, beer, spirits, and cocktails, along with a passion for creating memorable guest experiences. The Lead Sommelier will set the tone for service with a warm, welcoming presence and exceptional hospitality. Responsibilities include overseeing wine inventory—ensuring all selections are ordered, received, stocked, and properly entered into the POS system—as well as maintaining accurate records in line with company protocols. The ideal candidate will have a guest-first mindset, strong service standards, excellent communication skills, and a highly organized approach to their work.
 
RESPONSIBILITIES:
  • Maintain complete knowledge of wine list, and wine and food pairings.
  • Clean equipment, tools, and supplies for wine service and ensure equipment is in good working order, including cleanliness, sanitation, and appearance.
  • Maintain and update cellar/storage inventory according to set pars and internal controls, and request product to maintain stock.
  • Meet regularly with the wine trade to actively seek quality wines for the restaurant wine program as well as evaluate wines and other beverages for potential purchase.
  • Eliminate waste by training and supervising employees on wine knowledge, pour levels, proper storage, etc.
  • Verify accuracy of wine delivery ordered and received from the main warehouse and return or exchange deliveries when a warehouse error has occurred.
  • Maintain appropriate beverage costs by managing purchases and requisitions.
  • Perform other job-related duties as requested.
SKILLS AND EXPERIENCE:
  • Certified accreditation from a recognized organization (Court of Master Sommelier / WSET) preferred.
  • A minimum of 2 years of experience in high volume, elevated dining restaurant.
  • Must have Food Handler’s Certification.
  • Must be 21+ years of age.
  • Must be authorized to work in the United States.
  • Must be detail oriented and possess effective communication and written skills.
  • Ability to multi-task.
  • Must be a team player.
  • Self-motivated and performance driven.
  • Professional and courteous.
  • Remain in stationary position for up to 8 hours throughout the work shift.
  • Be able to reach, bend, stoop and frequently lift up to 50 pounds.
  • Punctuality and regular and reliable attendance.
  • Effective communication, written and interpersonal skills.
