Overview

Parkwest Bicycle Casino is searching for an exceptional and talented Lead Line Cook with these character traits. The Lead Line Cook will assist the Executive Chef in overseeing the kitchen and everyday matters. The right candidate will help us provide guests with the most outstanding food and dining experience. Responsibilities

  • Deliver cooking services and meet the required standards of performance by following policies, procedures, work instructions, training initiatives, codes of conduct, recognized best practices, safety laws and regulations.
  • Open for each shift by setting up work station with required tools, equipment and supplies; check production schedule; establish priority items; transport supplies from storeroom to work station(s); inform Chef de Cuisine or Sous Chef of any supplies needing replenishment; start prep work on each assigned menu item.
  • Prepare all assigned menu items following recipes and yield guides, ensure that proper health and safety procedures are followed during all food preparation and storage.
  • Communicate to Chef de Cuisine or Sous Chef any supply shortages and any excess items that can be used elsewhere, and any need for assistance during busy periods.
  • Break down station at shift’s end by returning all food items to proper storage; wrapping, covering, labeling and dating all items being stored; cleaning up and wiping down all food prep areas; returning all utensils and equipment to assigned areas; transporting empty or dirty pots/pans to the wash station; turning off unneeded equipment; restocking any depleted items.
  • Specific tasks may include, but are not limited to: emptying trash containers, cleaning any kitchen facilities, assisting with inventories, assisting with menu research/testing, performing any assigned duties in other kitchen areas, etc.
  • Must be available to work any shift including weekends, holidays, on call and overtime when needed.
  • Perform other duties as assigned.

Qualifications

  • Must be able to pass mandatory screening including a background check and drug test.
  • Must possess a California Food Handler Card.
  • Able to read, understand, and follow recipes.
  • Basic knowledge of kitchen equipment, utensils and procedures.
  • Able to deal effectively and interact well with customers and co-workers.
  • Able to work varied shifts and flexible schedules.
  • Able to communicate clearly with team members.
  • Requires strong organizational skills and the ability to multi-task effectively.
  • Able to work independently.
  • Able to work within a team and respond to quick changes in priority.

Education/Experience:   Certificate from college or technical school; or three years’ experience in a kitchen of comparable quality; or equivalent combination of education and experience. Experience with French, Chinese, Italian, Mexican, Thai, Korean, Vietnamese and Persian cuisines a plus.

 

Physical and mental requirements:

  • Must be able to lift and carry tools, supplies, and inventory up to 100 pounds.
  • Must be able to walk, stand, and bend at neck for 3 or more hours a day.
  • Position will require repetitive use of hands for the following actions; simple and power grasping, fine manipulation, pushing & pulling and reaching for entire shift.
  • Position may require exposure to excessive noise, exposure to dust, gas, flames, chemicals, exposure to extremes in temperature, humidity or wetness.
  • Must be able to perform all essential duties with or without accommodation.
