We are looking for Cluster Pastry Chef – Villa Le Corail, a Gran Melia Hotel & Melia Nha Trang
Mission:
- Serve the needs of the business, our guests, and our colleagues by leading the overall kitchen operations of the Resort
- Ensure that all guests to the Resort are delighted by the quality, creativity and variety of our food and beverage offerings in every area of the Resort.
- Treat our guests and our colleagues with respect and work hard together to deliver the highest quality of service to all.
Main responsibilities:
- To make great pastries and desserts, with reference to the most creative and original work being done around the world today
- To develop the future great Pastry chefs of the industry. Identify and train chefs with the highest potential and redeploy any chefs working in Pastry who do not have a passion for the work.
- Pay attention to food cost – but not be constrained by it in the search for creating new and original products.
- Prepare special Showpiece productions for special occasions such as weddings, birthdays and anniversaries, and display buffets.
- To be a Food Ambassador for MELIA, supporting new openings and Task Force missions
- To participate in and win competitions for originality, creativity and product quality.
- To oversee strict adherence to all required health & safety standards while performing the work.
- Ensure that Kitchen professionals are fully aware of Resort F&B strategy, and that their products meet these requirements
- Direct and coordinate the daily activities of all the Resort’s kitchens.
- Coach and guide new members of the team, putting in place proper orientation training and ongoing training and development for team members.
- Manage relationships and contracts with suppliers.
- Support and facilitate staff participation in local, national, and international competitions.
- Maintain the highest standards of Food Hygiene, and adherence with all Health and Safety standards.
- Report and take appropriate action to correct any health or safety hazard.
- Liaise with Chief Engineer regarding maintenance and repairs of equipment and fire equipment.
- Check and ensure the proper storage of raw and processed food items including the condition of food in freezers.
- Instruct staff on all emergency measures in case of accident and have a first aid kit available and stocked in the kitchens, in collaboration with Resort’s clinic.
- Ensure all work areas in the kitchen are kept tidy and clean.
Main requirements:
- Specialist Certificate
- Fluent English, any additional language will be an advantage (better if it is the same where the Resort is based).
- Food & Beverage (standard, trend, taste…)
- 5 years in a similar position in large Resorts or international companies.
