Jax Fish House & Oyster Bar is seeking a talented and experienced Chef de Cuisine to lead the culinary team in the heart of downtown Denver. Located between Union Station and Coors Field, Jax has been a cornerstone of the city’s dining scene for 30 years, bringing elevated coastal cuisine to Colorado in a vibrant and dynamic environment.

Position Summary:
As Chef de Cuisine, you will oversee all back-of-house operations, drive culinary innovation, and lead a talented kitchen team. You’ll be responsible for maintaining the highest standards in food quality, kitchen organization, labor management, and team development. The ideal candidate is a seasoned chef with proven leadership ability, financial acumen, and a passion for mentorship and excellence.

Responsibilities:
- Lead daily culinary operations, ensuring consistent execution of food quality and presentation
- Develop and implement seasonal, cost-effective, and innovative menus in collaboration with the culinary team
- Oversee food cost, inventory, labor, and kitchen budgets to achieve financial goals
- Hire, train, mentor, and develop HOH team members with an emphasis on retention, engagement, and performance
- Enforce compliance with health, safety, and sanitation standards
- Maintain and optimize kitchen systems, ordering, scheduling, and inventory management
- Collaborate closely with the General Manager and FOH leadership team to ensure overall success of the restaurant
Qualifications:
- Minimum 3 years of experience in a senior culinary leadership role (CDC, Executive Chef)
- Deep understanding of seafood preparation, sourcing, and seasonal cooking
- Strong leadership and communication skills, with a track record of building and managing high-performing teams
- Proficiency with cost controls, budgeting, P&L statements, and scheduling
- Working knowledge of POS (e.g., Toast), scheduling tools, Google Suite, and ordering platforms
- ServSafe Manager Certification (or willingness to obtain; training provided)
- Ability to stand for long periods and lift up to 50 lbs
- Availability to work evenings, weekends, and holidays as needed
