Baking and Pastry Department Chef, Eastern Standard Kitchen and Drinks
Overview of the Concepts:
Over the past year, Garrett Harker and ES Hospitality have been busy opening several exciting hospitality venues just steps from Kenmore Square and Fenway Park. Among these is the return of Eastern Standard Kitchen and Drinks, the craft cocktail bar, Equal Measure, and the group’s newest concept, Standard Italian. Best known previously for Eastern Standard, Island Creek Oyster Bar and The Hawthorne, Garrett is once again bringing enlightened hospitality and high energy operations to the Fenway neighborhood. Garrett is joined by Beverage Director Jackson Cannon and Culinary Director Brian Rae in the operation of these concepts.
The Baking and Pastry Department Chef is responsible for leading the ES Hospitality Baking and Pastry Department under the direction of the Culinary Director and CDC. This role is responsible for managing the production of baked goods, pasta and pastry across all ES Hospitality concepts: Eastern Standard Kitchen and Drinks, Equal Measure and Standard Italian.
Responsibilities:
Oversee and manage the Baking and Pastry Department under the supervision of the Culinary Director
Oversee the preparation and production of all the Baking and Pastry Department products: baked artisan breads, enriched rolls, pastry
Oversee the preparation and production of housemade pasta for both Eastern Standard and Standard Italian
Work closely with Chefs in each department in order to foster a more collaborative environment across all ES Hospitality departments and concepts
Take the lead in ordering and monthly inventory for the Baking and Pastry Department
Manage and publish the Baking and Pastry Department schedule weekly
Maintain adequate supply of all prepared products and ensure proper storage and refrigeration
Keep food waste to a minimum by ordering and utilizing proper quantities and rotating products
Properly clean, break down, and store all Baking and Pastry Department equipment including: ovens, mixers, proofer, freezer, refrigerators and floors
Work according to all health department guidelines, work cleanly and efficiently

Be an enthusiastic culinary professional with a passion for pastries, baked goods and genuine hospitality.
Be able to multitask, maintain organization and adapt as needed while taking part in a high volume pastry program
Communicate effectively with co-workers and managers in both Front and Back of House.
